- 1½ lb ground beef
- 2 Tbls fat
- 2 medium onions
- 1 cup celery
- 1 can condensed cream of chicken soup
- 1 can condensed cream of mushroom soup
- 1½ cups warm water
- ½ cup Minute Rice™, uncooked
- ¼ cup soy sauce
Brown meat in fat. Then brown onions and celery. Combine remaining ingredients. Bake 1 hour in 350° oven. Add chow mein noodles. Make 15 minutes more.
Taste to see if salt is needed.
Marcella Carberry (1907-1998) was born in Colby, WI and moved to Lodi with her husband Robert shortly after their marriage. Among other jobs, she was the cook at the Sunset Lanes (formerly the Northern Edge, now the Waddle Inn). After her death, her hand-written recipes found their way into the hands of her grandson, Blaze Miskulin–who is proudly sharing this taste of Lodi history with the community.
